TGMBA's Hot Sauce
For those who love the heat, this one is for you! I have always loved hot spicy foods, and I came up with this recipe by taking ideas from various sources and techniques.
1/2 lb Orange and or Red Habanero Peppers
1/2 of a red bell pepper
5 cloves of garlic
1 cup shredded carrots
5 chipotle peppers (from can, with tablespoon of adobe sauce)
Salt to taste
1 tablespoon ground cumin
Cider vinegar (add enough to make sauce somewhat liquid, but not too watery)
juice of 1 lime (optional)
Prepare Habanero Peppers by removing stems. Cut up red bell pepper into two or three pieces. Remove outer shell of shallots and garlic cloves. Roast all peppers, onion and garlic at 400F for 10 minutes. Let cool.
Place peppers, shallot, garlic, and carrots into food processor and process until a paste is formed. Place paste into bowl and add salt, cumin, adobe sauce, vinegar, and lime. Mix well.
I package in jars with plasic wrap under the lid. Gets better with age.
